About: 'After 8-10 days of fermentation, the wine is kept on the skins for a few more days. It is then pulled off by pressing with a manual hydraulic press. The wine was then stored in barrels, barriques and fourth and fifth passage tonneaux for six months on gross lees. After being drawn from the lees, the wine spends a further 10 months in tonneaux followed by a further six months in stainless steel before bottling.'
