About: 'The grapes come from vineyards located at 150 m above sea level, situated on gravelly soil with a strong presence of silt and calcareous formations. After the manual harvest, the grapes are left overnight in the cellar before pressing to achieve a natural cooling afterwards, they are de-stemmed and pressed directly in a small manual press. The must must be cooled before crushing and added to the base wine before bottling, so that the natural fermentation in the bottle starts and ends after approximately 3 months. A long bottle storage continues.'
